Pita Pockets

As the name suggests, these are cute little pockets in which you can stuff any filling and enjoy.

Let us start cooking!!!

Ingredients:
Whole wheat flour: 1 cup
Yeast: 1 tbsp
Sugar: 1 tbsp
Oil: 1 tbsp
Water as required
Salt as per taste

Method:
1. Heat 2 tbsp water in a small bowl. When it is lukewarm mix in sugar and yeast. Let it rest for 10-12 minutes. The mixture will rise and will have small bubbles in it.
2. Take flour in a bowl. Mix in all the ingredients along with yeast mixture and make soft dough with the help of water.
3. Knead it for few minutes until it turns elastic and smooth.
4. Cover the dough with a wet muslin cloth and let it rest for approx 1 hour.
5. The dough will rise.
6. Gently knead the dough and make small balls out of it.
7. Roll a small elongated roti. Then squeeze from the center. Apply oil on both the parts and put one part over the other.
8. Now roll out a roti. Do not make it too thin.
9. Heat tawa. Put the roti on it. When small brown spots start to appear flip the roti and let it cook from other side.
10. The roti will puff up. Now take the roti on a plate and cut it from center and you’ll get two pita pockets.
11. In this way prepare the other pockets also.
12. Stuff the pockets with choice of your fillings and serve.

Tips:
1. Yeast can be replaced by baking soda and lemon juice.
2. Step 1 of method can be removed if you are using activated yeast.
3. This is a guaranteed method in which your rotis will puff up. I’ve tried other ways also but I find this way most convenient.
