Date and Almond Hamantaschen stuffed with Banana Halwa step by step instructions:

Hamantaschen is quite an interesting name. I came to know about it by a friend of mine, long time back. Since then, I have been making these quite many times. They are indeed very simple to make and can be both baked and no-bake. You can give them a thousand variations based upon your imagination.
Today I will be showing you a no-bake version for the outer covering of this recipe. The inside will be filled by delicious "Banana Halwa"!

Makes: 8 Hamantaschen

Ingredients:
Dates: 3/4 cup (150 gms, deseeded)
Almonds: 3 tbsp (40 gms)
Banana Halwa: 8 tsp
Cinnamon powder: 1/2 tsp
Salt: a pinch
Pistachios: 2-3 tbsp (powdered)

Method:
1. In a grinder, grind together dates, almonds, cinnamon powder, and salt. The ground mixture will be clumpy.





2. Take a plastic sheet and keep the mixture on it.



3. Cover it with another plastic sheet and roll into 2-3 mm thick circle.




4. Remove the top sheet. Take a circular cookie cutter and cut the rolled dough into circles.




5. Similarly, do for the remaining dough.
6. Take 1 tsp of banana halwa and keep it in the center of the circle.



7. Fold the circles over the banana halwa from each side and pinch lightly at the corners to make a triangle.




8. Now roll the prepared hamantaschen in ground pistachios.



9. Similarly, make other hamantaschens also.




10. Serve them anytime.

Tips:
1. While grinding the dates and almonds, if a clump is not formed then add more almonds.
2. These can be stored in the refrigerator for about 2-3 days.

Banana Halwa

Banana Halwa step by step instructions:

Sweets are my weakness. I am so fond of them that even looking at them makes me feel so happy. :)

Yesterday we (me and my husband) went to “Good Earth City Center” and there is this shop called “Om Sweets” (Well I am talking about Gurgaon, India). So the point is whenever we go to good earth city center, it is a must to go to that shop, even if we don’t want to eat anything.

It is just like I love admiring the sweets displayed over there and in my mind, my imaginations start. When I will reach home I will do this and do that. Hence the list is just endless. And this certainly proves that I am a great sweet lover.
Being acidic from quite many days, it has become a routine for me to have bananas. So my home without bananas is just not possible.

With the rendezvous of my eyes with the sweets yesterday at the shop and the availability of bananas I instantly thought of making this yummy “Banana Halwa”.

The chopped almonds give a wonderful taste to the halwa managing the overall sweetness of the halwa.

Ingredients:
Banana: 1 (140 gms, ripe, peeled and mashed)
Sugar: 1-2 tbsp
Ghee: 1 tbsp + 1 tbsp
Almonds: 1 tbsp (chopped)
Cardamom: 1 (powdered)
Saffron: 3-4 strands (crushed)

Method:
1. In a pan heat 1 tbsp of ghee.



2. Fry the almonds and keep aside.





3. In the same pan add the banana and cook for about 1-2 minutes.







4. Now add sugar and mix well.




5. Keep the flame on low and keep stirring until the mixture gets thick. This procedure will take about 7-8 minutes.



6. Now add the remaining 1 tbsp of ghee and mix well.



7. After 2-3 minutes the mixture will become glossy.
8. Add cardamom powder, saffron, and almonds. Mix well and switch off the flame.



9. Serve hot or cold and trust me it taste great in both the cases.
10. Super yummy “Banana Halwa” is ready!


Tips:
1. Mash the banana with the help of a fork. Never grind the bananas.
2. The quantity of sugar can be adjusted as per how ripe and sweet the banana is.

Kache Kela aur Gajar Kofta Kadhi

Kache Kela aur Gajar Kofta Kadhi step by step instructions:

Kadhis taste wonderful plain also, but if we add some koftas into it then the taste of the kadhi is enhanced a lot.
In my previous post, I wrote about how to make "Kache kela aur Gajar Kofta". Today I will be showing you how to make kofta kadhi.
Grated carrot and boiled raw banana are used to make the kofta. To make it healthy I have cooked the koftas in appam pan with very little oil.
If you want the koftas to be intact then add them to the kadhi just before serving else you can add them before also and enjoy soft and mushy koftas.

Let us start cooking!!!


Ingredients:

For the koftas:
Raw banana: 1 (boiled, peeled, and mashed)
Carrot: 1 (grated and peeled)
Turmeric powder: 1/8 tsp
Coriander powder: 1 tsp
Chaat masala: ½ tsp
Cumin seeds: ¼ tsp
Salt as per taste
Oil for cooking the koftas

For the kadhi:
Curd: ½ cup
Water: ¾ cup
Gram flour (besan): 1 ½ tbsp
Turmeric powder: 1/8 tsp
Coriander powder: 1 tsp
Ghee: 1 tbsp
Curry leaves: 4-5
Asafoetida: a pinch
Mustard seeds: ¼ tsp
Cumin seeds: ½ tsp
Fenugreek seeds powder: 1/8 tsp
Red chili powder: ¼ tsp
Salt as per taste

Method:
For the koftas:
1. Mix together raw banana, carrot, coriander powder, cumin seeds, turmeric powder, chaat masala, and salt.


2. Make 6-7 small balls from the dough.


3. Heat appam pan. Grease it.
4. Keep the dough balls into the cavities of the pan.


5. Cover it and let cook for about 4-5 minutes.


6. Flip and again cook for 3-4 minutes.


7. Take out on a plate.
8. Yummy “Kache Kela and Gajar Kofta” is ready!


For the kadhi:
9. Heat curd in a pan.



10. Add besan and mix well. Make sure no lumps remain.




11. Add water and mix well.
12. Stir continuously until a boil comes in the kadhi.



13. Lower the flame and add salt, turmeric powder, and coriander powder. Mix well.




14. In a small pan heat ghee.
15. Add asafetida and mustard seeds. Let the seeds crackle.
16. Add curry leaves and fry for a few seconds.
17. Add cumin seeds and fenugreek seeds powder and fry for a few seconds.
18. Add red chili powder and fry for a few seconds. Make sure the masala doesn’t burn.



19. Immediately pour the prepared tadka on the kadhi and cover it. Switch off the flame. After few minutes uncover it and take a boil of the kadhi.




20. Put the koftas in the kadhi and serve hot with roti, naan, paratha, etc.
21. Yummy “Kache Kela aur Gajar Kofta Kadhi” is ready!


Tips:
1. I did not add chili to the koftas. You can add as per your taste.
2. Be careful while preparing the tadka. Take the pan off the flame and then add the masalas. This helps in preventing the burning of the masalas.
3. Always stir the kadhi continuously until a boil comes otherwise whey gets separated in the kadhi.
