Sooji Kachori stuffed with Leftover Paneer Pudina Kofta step by step instructions:
I made Paneer Pudina Kofta curry. Nonetheless, it was super yum. I had intentionally made the koftas extra so that I could enjoy them with hot tea/coffee.Sooji kachori was in my list long awaited but did not get time or rather just got lazy to make them. Hence today I got a very good opportunity to make the sooji kachoris and stuff them with these koftas.
Instead of deep frying the kachoris I made them in appam pan. So super healthy and yummy!

Ingredients:
Leftover paneer pudina kofta: 4-5
Water: ½ cup
Ajwain powder (carom seeds powder): a pinch
Salt as per taste
Sooji (semolina): ¼ cup
Oil: ½ tsp
Method:
1. Bring water to a boil in a kadai.
2. Add salt and ajwain. Mix well.
3. Add sooji and mix well and switch off the flame.
4. Let cool.
5. Once cooled grease your palms with oil and knead the dough.
6. Make 4 small balls from it.
7. Flatten them.
8. Keep the koftas inside each flattened ball.
9. Fold the dough and make an even round shape.
10. Similarly, make the other kachoris also.
11. Heat an appam pan.
12. Apply some oil.
13. Keep the prepared kachoris inside the cavities of the appam pan.
14. Let cook uncovered. Flip after some time. It must have turned brown.
15. Let cook from the other side also.
16. Take out on a plate.
17. Serve hot with ketchup, chutney etc.

Tips:
1. If you feel the dough is very soft then add a bit of sooji more.
2. Black pepper powder can also be added to the dough. It gives a nice flavor.
3. If we cover the appam pan then the kachoris will become soft and not crispy. So if you want crispy kachoris then let them cook uncovered.
