Leftover Tuvar Dal Mathri step by step instructions:
Mathris made from tuvar dal are exceptionally good. Whenever tuvar dal is left I either make Dal Dhokli or Mathri.The procedure to mathris is very simple. You just need to take care of the extra masala to be added.

Ingredients:
Leftover tuvar dal: ½ cup
Whole wheat flour (gehun ka atta): 1 cup
Turmeric powder: ¼ tsp
Coriander powder: ½ tsp
Red chili powder: ½ tsp
All purpose flour: 2 tbsp
Water: 2-3 tbsp
Oil for frying
Salt as per taste
Method:
1. In a plate take flour. Add salt, red chili powder, turmeric powder, and coriander powder. Mix well.
2. Add the tuvar dal and knead into a firm dough.
3. Cover and keep aside. Let it rest for half an hour.
4. In a small bowl take all purpose flour and add water to it. mix well. the mixture should be neither too thick nor too thin. The consistency must be like that, it should be easily spreadable on the roti.
5. Take the dough and divide it into 10 equal parts.
6. Take one part and roll it very thinly into a circle.
7. Similarly, roll the other rotis also.
8. Take one roti and spread the slurry prepared.
9. Keep another roti on top of it and again spread the slurry.
10. Repeat procedure with 3 more rotis. So in all, we have 5 rotis.
11. Finally, at the top again apply the slurry and roll it carefully.
12. Cut into equal parts.
13. Take one part and roll it thinly. Similarly, roll the other parts also.
14. Repeat the procedure with the remaining dough.
15. Heat oil in a kadai. When the oil is moderately hot, put a few mathris in the oil at a time and let fry evenly. Keep the flame on low always.
16. When the mathirs turn brown and crispy, take them out.
17. Let cool and store in an airtight container.
18. It is best had with tea/coffee.

Tips:
1. As we need a firm dough, hence the quantity of flour should be taken according to the dal left.
2. Do not fry the mathris on high flame, otherwise, they won’t get cooked properly.
