Khoba Roti step by step instructions:
Khoba roti is a traditional Rajasthani food. It is a designed and thick roti generally made from whole wheat flour and seasoned with carom seeds, cumin seeds, and salt. It tastes super delicious with kadi, urad dal, pickles, chutneys, etc.Check out my kadi recipes here!

Ingredients:
Whole wheat flour: 1 cup
Water: ½ cup less 1 tbsp (lukewarm)
Cumin seeds powder: ½ tsp (optional)
Carom seeds powder: ½ tsp (optional)
Ghee: 2 tbsp + as required to apply on the rotis
Salt as per taste
Method:
1. In a big plate mix together flour, ghee, salt, cumin seeds powder, and carom seeds powder. Mix well.
2. Add water and knead into stiff dough.
3. Let the dough rest for half an hour.
4. Smoothen the dough by kneading it again.
5. Make 2 equal balls of it.
6. Take one ball, flatten it and roll it into a big circle. Keep the roti thick. The thickness of the roti should be ~1/2 cm.
7. Heat a tawa. It should be moderately hot, neither too hot nor too cold.
8. Keep the roti on the tawa and flip it after 15-20 seconds.
9. Keep the flame on low always.
10. Start pinching the roti. Start either from the center or from the edges. And in a continuous fashion pinch the entire roti.
11. This procedure will take about a minute or so and in that time the roti will be almost done from the other side.
12. Now flip the roti and let cook for about 2 more minutes.
13. Remove the roti from tawa and now cook it on direct flame. The flame should be on low always. Evenly cook from both the sides.
14. Smear ghee all over the roti. Mind it ;-) this roti demands a lot and lot of ghee :).
15. You can even pinch the roti first and then keep it on the tawa for cooking.
16. Serve hot with kadhi, dal, sabji, etc of your choice.

Tips:
1. Khoba roti should always be served immediately. It tastes wonderful when hot.
2. You can use tweezers to pinch the roti.
