Hara Bhara Kabab step by step instructions:
As the name indicates, this kabab is hara (green in color), with loads of green veggies. It can be deep fried or shallow fried. In both the cases, it tastes awesome.You can shape the kababs in any manner you like. These can be prepared in advance and kept in the refrigerator for 1-2 days. Ingredients:
Spinach (Palak): 190 gms
Green peas: ¾ cup (90 gms, boiled)
Coriander leaves: 2 tbsp (20 gms, finely chopped)
Potato: 1 big (145 gms, boiled)
Ginger: ½ tsp (grated)
Red chili powder: ½ tsp
Garam masala: ½ tsp
Chaat masala: ½ tsp
Dry mango powder (Amchoor powder): ½ tsp
Gram flour (besan): 2 tbsp
Cashew nuts: 4-5 (halved)
Salt as per taste
Oil for shallow frying the kababs
Method:
1. Boil the spinach leaves for 2-3 minutes. Drain the hot water and pour cold water upon it. Remove all the excess water from the leaves.
2. Grind together spinach leaves and peas to a coarse paste.
3. Dry roast the gram flour until fragrant.
4. In a big plate mix together spinach-peas paste, mashed potatoes, ginger paste, coriander leaves, red chili powder, chaat masala, garam masala, besan, amchoor powder, and salt.
5. Take small portions of the mixture and make small flattened balls. Put a piece of cashew nut in the center and press a bit.
6. Heat a griddle/tawa. Apply oil evenly.
7. Put the kababs on the tawa and let them cook until brown on one side. Then flip and again cook the other side also. Smear some oil. It will take around 8-10 minutes for the kababs to get ready.
8. Serve hot with tomato ketchup, green chutney etc.
9. Yummy “Hara Bhara Kabab” is ready!
Tips:
1. Make sure you remove the excess water from the spinach otherwise the kababs will be difficult to handle.
2. Instead of grinding the spinach leaves you can finely chop them also. In this case, the quantity of spinach can be increased.
3. You can use other veggies also as per your choice.
