Eggless Banana Chocolate Walnut Muffins

Eggless Banana Chocolate Walnut Muffins step by step instructions:

The muffins are a treat always. I enjoy making these banana and chocolate muffins. They are very soft and yummy. And yes, these muffins are eggless.
I have made the muffins from milkmaid and whole wheat flour.

Let us start cooking!!!


Ingredients:
Milkmaid: ½ tin (200 gms)
Whole wheat flour: 1 cup (200 gms, tapped and filled in the cup)
Baking powder: 1 tsp (6 gms)
Baking soda: ½ tsp (3 gms)
Ghee: ¼ cup (50 gms)
Walnuts: ¼ cup (30 gms, crushed)
Banana: 1 (170 gms, mashed)
Curd: ½ cup (100 gms)
Milk: ½ cup
Cocoa powder: 2 tbsp
Drinking chocolate powder: 2 tbsp
Vanilla essence: 1 tsp

Method:
1. Preheat microwave in convection mode for 10 minutes at 200 degree Celsius.
2. Sieve together flour, baking powder, and baking soda for 3 times. This helps in mixing the dry ingredients really well.






3. In a big bowl take condensed milk. Add ghee. Mix well.




4. Now add curd and whisk well.




5. Add the dry ingredient slowly and fold the mixture.



6. Mash the bananas. Add the mashed bananas and milk to the batter. Fold well.




7. Finally, add the vanilla essence and walnuts and fold well.




8. Grease the muffin molds.



9. Fill the molds 1/4th with the batter.



10. Now to the remaining batter add cocoa powder and chocolate powder. Fold well.



11. Now pour the batter up to 3/4th in the molds.



12. Sprinkle the crushed walnuts over the batter in the muffin molds.



13. Keep them in the preheated oven and let them bake for 20-25 minutes.
14. Check if done by inserting a toothpick. If the toothpick comes out clean then the muffins are done. Otherwise, bake for a few more minutes.



15. Let the muffins cool in the mold for some time and then de-mold them. Keep them on a wire rack for cooling.




16. Enjoy the muffins with a cup of coffee.

Tips:
1. Never remove the muffins from the tins immediately after taking them out from the oven.
