Aloo ki kadhi step by step instructions:

Ingredients:
Potato: 1 (75 gms, boiled, peeled, and grated)
Besan: 1 tbsp
Curd: ½ cup
Water: ¾ cup
Turmeric powder: ¼ tsp
Coriander powder: 1 tsp
Ghee: 1 tbsp
Asafoetida: a pinch
Cumin seeds: ¼ tsp
Mustard seeds: 1/8 tsp
Curry leaves: 5-6
Green chili: 1 small
Fenugreek seeds powder: ¼ tsp
Salt as per taste
Method:
1. In a pan heat curd. As soon as the curd becomes moderately hot add besan and mix well. Make sure no lumps remain.
2. Now add the grated potato and mix well.
3. Add water and stir well.
4. Stir continuously on a slow flame until a boil comes in the kadhi.
5. Now add turmeric powder, coriander powder, and salt. Mix well.
6. In a small pan heat ghee.
7. Add asafetida and mustard seeds. Let the seeds crackle.
8. Add cumin seeds and fenugreek seeds powder. Fry for a few seconds.
9. Add curry leaves and green chili and fry for some time.
10. Immediately pour the tadka over kadhi and mix well. Cover the kadhi and switch off the flame.
11. Serve hot with roti, paratha, rice etc.
12. Yummy “Aloo ki Kadhi” is ready!
Tips:
1. You can keep the kadhi chunky also by keeping small pieces of potato in it instead of grating it. That also tastes delicious.
2. Instead of green chili tempering, red chili powder can also be used.
