Potato and Bean Quesadilla

Cheesy Potato and Bean Quesadilla step by step instructions:

Quesadilla”: difficult to pronounce but very easy to cook.

Today we will be making cheesy Potato and Bean Quesadilla. A Mexican recipe is incomplete without beans. And even if it is not then also I love adding beans. ;-)
Cheese is completely optional. But the flavor it gives to the recipe is finger licking.


Let us start cooking!!!

Ingredients:
For the tortilla dough
Maize flour (Makkai ka atta): ½ cup
Whole wheat flour (gehun ka atta): ½ cup
Whole wheat flour: For dusting
Clarified butter (ghee): 2 tbsp
Salt 1 tsp
Water: 1/3 cup (lukewarm)

For the filling:
Potatoes: 3 (boiled and grated)
Kidney beans (Rajma): 2 tbsp (boiled)
Onion: 1 (finely chopped)
Green Chili: 1 (finely chopped)
Red chili powder: 1 tsp
Chaat masala: 2 tsp
Cheese cubes: 3-4
Salt as per taste

For cooking
Clarified butter: 1 tbsp

Method:
For the tortillas
1. Take maize flour, whole wheat flour, salt, and clarified butter on a plate. Mix well.


2. With the help of water knead into soft dough. (Just like that of Rotis)


3. Divide into 7-8 equal balls.


4. Take one ball and make a thin roti from it.



5. Heat tawa and put the roti over it.


6. Let it cook from one side on low flame for less than a minute. Flip it and let it cook on the other side for a minute more.


7. When the roti is done keep it aside on a plate
8. Similarly, make all the rotis/tortillas.


For the filling
1. Mix together potatoes, beans, green chili, red chili powder, salt, and garam masala. Mix well.



2. Take one tortilla and spread the mixture uniformly over it. The thickness should be around a cm.
3. Grate one cube of cheese over it.


4. Cover it with another tortilla.


5. Similarly prepare others also.

Cooking the quesadillas
1. Heat a tawa. Grease it with ghee.
2. Put one quesadilla over it. Cook from both the sides until the tortillas get crisp.


3. Keep it on a plate.
4. Cut it into four equal parts.
5. Similarly, cook other quesadillas.
6. Serve hot with choice of chutney, salsa, ketchup etc.


Tips:
1. While rolling the rotis, be careful, as it tends to tear apart.
2. Prepare in advance the quesadillas and cook only when you want to eat otherwise they will turn soggy.
3. I added tomato 1 tbsp ketchup to the potato and bean mixture. Love the slight sweetness in it.
4. Be careful while flipping the quesadillas on the tawa because we don't want our mixture to come out.
