Pharah or Peetha or Goojha step by step instructions:
Ingredients:
Chana dal: 2 tbsp
Urad dal: 2 tbsp
Rice: 2 tbsp
Green chili: 1
Ginger: 1 inch
Garlic: 1 clove
Cumin seeds: 1 tsp
Red chili powder: ½ tsp (Optional)
Rice flour: 1 cup
Water: ½ cup (lukewarm)
Salt as per taste
Water for cooking the pharah
Method:
1. Wash and soak chana dal, urad dal and rice for at least 4-5 hours.
2. Grind together chana dal, urad dal, rice, cumin seeds, salt, green chili, red chili powder, ginger, and garlic into a paste without using water. If required add very little as we have to fill this into the rice flour covering.
3. Add salt to rice flour and knead into smooth dough with lukewarm water.
4. Keep aside for half an hour.
5. Divide the dough into 6 equal parts.
6. Take one part and roll out into a small puri.
7. Take one spoonful of dal mixture and keep on one side of the puri.
8. Apply water on the edges of the roti.
9. Fold and make the shape like that of gujiyas.
10. Similarly, make others also.
11. Boil water in a kadai. Add salt.
12. Now put the pharah into boiling water and let them cook on low flame for at least 12-13 minutes, making sure they do not stick to the bottom of the kadai.
13. Take out on a plate. (3 are cooked and the remaining are uncooked.)
14. Serve hot with green chutney.
15. Pharah is ready!
Tips:
1. Pharah can be made sweet too. I used a combination of dals. You can use only chana dal or urad dal as per your taste.
2. You can make any shape of the pharah.
3. When the pharah gets cooked, they will start to float in the water.
4. If you are left with a few pharah you can make "masala pharah". They also taste nice.

Pharah is very much similar to momos. I have made its shape similar to gujiyas. The outer covering is made up of rice flour and the filling is made from a mixture of dal and rice.
