Dates Cake

Dates cake in pan step by step instructions:

I love baking and always keep on baking something or other. I made this “dates cake” in kadai; a procedure learnt by my mother. The cakes she bakes are not fancy but are finger-licking certainly.

I made the “dates cake” using whole wheat flour and that too multigrain flour. It came out nice; the flavor which dates imparted to the cake was super.


Let us start cooking!!!

Ingredients:
Whole wheat flour: 1 cup
Dates: 1 cup (de-seeded)
Milkmaid: ½ tin (200 gms)
Almonds & walnuts: 2 tbsp (chopped into small pieces)
Curd: ½ cup
Milk: ½ cup
Baking powder: ¼ tsp
Baking soda: ¼ tsp
Ghee: 1/3 cup

Method:


1. In a microwave safe bowl mix dates and milk. Microwave for 5 minutes stirring once in between.


2. Mix it well. You will see that dates have completely dissolved in the milk. If not, then after cooling grind it.


3. In another bowl mix ghee and date & milk mixture. Beat it.



4. Add milkmaid and curd and mix well.



5. Sieve together flour, baking soda and baking powder.
6. Fold the flour mixture to the batter prepared in step 4.
7. Add a tablespoon of dry fruits in the batter and fold well.
8. Meanwhile, grease a tin in which you will bake the cake.
9. Heat a kadai on high flame (for about 3-4 minutes).
10. Pour the batter into the greased tin.
11. Spread the remaining dry fruits on the batter.
12. Put a small stand or perforated plate in the kadai.
13. Put the cake tin on the stand in the kadai.


14. Cover the kadai and let the cake bake on slow flame for about 40-45 minutes.
15. Check if the cake is done or not by inserting a toothpick in the cake. If the toothpick comes out clean then the cake is ready otherwise bake for some more time.


16. Take the cake out and let it cool on a cooling rack. When cooled, cut into pieces and serve.


17. The most delicious “dates cake” is ready.

Tips:
1. I used saffron milk instead of plain milk. This made the cake even tastier.
2. The cake will remain good at room temperature for 2-3 days maximum. For longevity keep the cake in fridge.
