Mixed Vegetable Uthappam

Mixed Vegetable Uthappam step by step instructions:

Uthappam is a delicious south Indian snack.
I usually do not make the batter for uthappam. I use the leftover idli/dosa batter only.
The list is endless with different types of uthappams. Just a few to mention: cheese uthappam, paneer uthappam, tomato uthappam, onion uthappam, and to be more precise just select your favorite veggie and you can make your own type of uthappam.

Let us start cooking!!!

Ingredients:
For the batter
Rice: 3 cups (2 cup basmati + 1 cup parboiled rice)
Urad Dal: 1 cup
Baking soda: 1/2 tsp (Optional)
Salt as per taste

For the topping
Cabbage: 1 cup (finely chopped)
Tomato: 2 medium size (finely chopped)
Capsicum: 1 cup (finely chopped)
Onion: 2 medium size (finely chopped)
Ginger: 1 inch (grated)
Green Chilli: 4 to 5 (de-seeded and finely chopped)
Coriander leaves: 1/2 cup (finely chopped)
Oil as required
Pav Bhaji Masala (Optional)

Method:
1.Wash and soak dal and rice separately for 5-6 hours.
2.Grind them separately with very little water.
3.Take a big container and add both the batter to it.
4.Add salt and baking powder.
5.Keep this container covered in a warm place for 10-12 hours for fermentation.
6.You’ll see the batter has risen. The consistency of the batter should be viscous and not too free flowing from the spoon.
7.In a container mix all the veggies.
8.Take a pan and grease it properly with oil. Let it heat up.
9.Pour few tbsp of batter over the pan and spread it in a circular shape. It should be around ½ cm in thickness.
10.Spread the veggies on the Uthappam base. Press the vegetables with a spoon to settle them down.
11.Sprinkle some pav bhaji masala.
12.Keep the flame on low and cook the Uthappam till it turns light Brown in colour.
13.Flip to other side and cook the vegetables on medium flame.
14.Serve it hot with green chutney or ketchup.

Tips:
1.Uthappam can be prepared from leftover idli/dosa batter also.
2.You can make uthappam of any veggie of your choice.
3.Don’t cook the uthappams on high flame, otherwise, the interior would be raw and will not taste good.
4.You can sprinkle any masala of your choice.
