Aloo (batata) Vada

It’s an all time enjoyable snack. During rainy season, there are football matches in our colony. Several food stalls are set up. But the main attraction for us remains the aloo (batata) vada stall. The fragrance is just mouth-watering.
So during those days at-least 2-3 times I prepare these vadas and and relish them with chutneys or sometimes stuff them in pav with some chutney to have it has a vada pav which is Mumbai’s famous street food.




Let us start cooking!!!

Ingredients:
For the stuffing
Potatoes: 5 medium boiled and mashed
Onions: 2 medium finely chopped
Ginger-Garlic paste: 2 tsp
Curry leaves: 12-14
Oil: 1 tbsp
Mustard seeds: ½ tsp
Turmeric powder: 1/4 tsp
Amchur Powder (dry mango): ¼ tsp
Green chillies: 3-4 de-seeded and finely chopped
Coriander leaves: 2 tbsp finely chopped
Salt as per taste
For the Gram flour batter
Gram flour (besan): 1 cup
Red chilli powder: 1 tsp
Soda bicarbonate: a pinch (Optional)
Turmeric powder: 1/4 tsp
Oil: for frying
Salt as per taste

Method:
1. Heat oil in a pan and add the mustard seeds. When the spluttering stops add curry leaves, ginger-garlic paste and green chilles. Fry for few seconds until all are cooked.
2. Now add the onions and fry till translucent.
3. Add turmeric powder.
4. Add the mashed potatoes and salt. Stir well. Switch off the flame.
5. Add amchur powder and coriander leaves and mix well.
6. Keep the mixture aside until it gets cooled.
7. Till then prepare the gram flour batter.
8. In a bowl take besan. Add water to make a thick batter. Make sure no lumps remain.
9. Add turmeric powder, salt and soda bicarbonate.
10. Now make equal sized balls of potato mixture.



11. Heat oil in a kadai.
12. Dip the potato balls in the besan batter and put the batter wrapped potato ball in the kadai for frying. Keep the flame on low.



13. Fry from both the sides till golden brown in color.



14. Drain on an absorbent paper. Serve hot with chutneys of your choice.

Tips:
1. If the potatoes are too soft to handle (or make a ball) then add some grounded bread in it.
2. Do not make the besan batter very thin otherwise the coating to the potato balls will not be proper.
3. The vada may remain uncooked if the flame is too high.
