Bean Burrito

Bean Burrito step by step instructions:

Kidney Beans Burrito is a Mexican specialty. Burritos are very easy to make. For the basic burrito, you need the tortilla (which is a kind of roti), stuffing (we will be using kidney beans or rajma), salsa and some salad.
It is one among my favorite recipes. I usually cook it a lot. If I make rajma for any recipe, it is sure I will save some for making at least one burrito.


Let us start cooking!!!

Ingredients:

For the stuffing
Kidney beans (Rajma): 1/2 cup (boiled)
Tomato: 1
Onion: 1 small
Ginger-Garlic paste: 1 tsp
Ghee: 1 tbsp
Cumin seeds: 1 tsp
Turmeric powder: ¼ tsp
Coriander powder: 1 tsp
Red chili powder: 2 tsp
Tomato ketchup: 1 tbsp (optional)
Salt as per taste

For the tortilla
Maize flour (makkai atta): ½ cup
Wheat flour (gehun atta): ½ cup
Salt as per taste
Water: ½ cup (lukewarm) or as required

For the salsa
Tomatoes: 2 (seeds removed, roughly chopped)
Onion: 1 (roughly chopped)
Capsicum: 1 small (roughly chopped)
Vinegar: ½ tbsp.
Garlic: 1-2 pods
Ginger: 1 cm
Coriander leaves: Fistful
Green chili: 2
Lemon juice: 1 tbsp
Sugar: 1 tbsp (optional)
Salt as per taste

For making and cooking tortillas
Cheese: 2 cubes (grated) - Optional
Spring onions: 1 (chopped)
Ghee as required

Method:

For the Tortilla
1. Mix together maize flour, wheat flour, and salt. Add water and knead into smooth dough. Keep aside covered for half an hour.


2. Divide the dough into 6 equal balls.
3. Roll out thin rotis with the help of dry wheat flour.


4. Cook the tortilla on both the sides and keep aside.
5. Similarly, make and cook all the tortillas.


6. Cool them and keep stacked up until all other things are done and the burritos are ready to be made.

For the Stuffing
1. Grind onion to a smooth paste.
2. Heat ghee in a pan. Add cumin seeds. Let them fry for a few seconds.
3. Add ginger-garlic paste and fry until the raw smell has gone.
4. Add the onion paste and fry until all the water has evaporated and its raw smell has gone.
5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
6. Grind tomato and add to the pan. Cook until the ghee starts to separate from the tomato.
7. Now add the rajma. Make sure you add very little water as we want our stuffing to be tight enough and not runny.
8. Cook for 10-15 minutes, stirring occasionally.
9. Take out in a bowl.

For the Salsa
1. In a grinder take tomatoes, onions, capsicum, garlic, ginger, green chili, coriander leaves, sugar, salt, and vinegar. Roughly grind and take out in a bowl. Add lemon juice and mix well.
2. Keep it refrigerated before using.

How to make burrito


1. Take one tortilla. Take 2 tbsp of bean mixture and keep it in across the diagonal of the tortilla. Put a tbsp. of salsa over it. Put some spring onions and grated cheese over it. Fold the tortilla from both the sides, one over the other.



2. Heat a tawa. Apply ghee on the tawa. Keep the burritos on it and cook them on both the sides for few minutes.
3. Yummylicious “Bean Burritos” are ready.


4. Serve hot with salsa.

Tips:
1. You can use all or any colored capsicum.
2. Instead of making masala rajma for the stuffing you can simply keep boiled rajma in the tortillas. Just sprinkle some salt and red chili powder for flavor.
3. Hung curd goes well with the burritos.
