Leftover Quinoa Lapsi

Leftover Quinoa Lapsi step by step instructions:

I love eating Lapsi and especially during winters or rainy season. I had a bowl of cooked quinoa left with me so thought of making lapsi. It takes just a few minutes and you can immediately satiate your hunger.
It is undoubtedly very healthy and yes tasty too.

Ingredients:
Quinoa: 1 cup (cooked)
Jaggery (gud): ½ cup (~70 gms)
Water: ¼ cup
Cardamom: 1 (peeled and powdered)
Almonds: 2-3 for garnishing

Method:
1. Take jaggery in a pan and add water.





2. Bring it to a boil and let all the jaggery melt.
3. Strain the mixture.



4. Add cooked quinoa and cardamom powder. Mix well. cook until all water evaporates.



5. Take out in a bowl. Garnish with almonds.
6. Serve hot.
7. Yummy and healthy “Leftover Quinoa Lapsi” is ready!


Tips:
1. Water can be replaced by milk also.
2. The quantity of water should be taken carefully as the quinoa is already cooked. Hence we require very little water.
