Leftover Paratha Uthappam

Leftover Paratha Uthappam step by step instructions:

My hubby is very fond of dosas and that too homemade ones ;-). So I had 1-2 leftover parathas and some dosa batter left with me. First I thought of making uthappam but then those parathas hovered my mind. I thought why not make paratha uthappams and voila a new recipe created. It had the goodness of roti and taste of uthappam. It is certainly a complete and satiating meal.

Let us start cooking!!!


Ingredients:
Paratha: 2
Idli/dosa batter: ½ cup
Tomato: 2 tbsp (finely chopped)
Capsicum: 2 tbsp (finely chopped)
Onion: 2 tbsp (finely chopped)
Salt as per taste
Black pepper powder as per taste
Ghee as required

Method:
1. In a bowl mix together the batter, onion, tomato, capsicum, salt, and black pepper powder.



2. Heat a tawa and grease it with ghee.
3. Take one paratha and evenly apply the batter mixture on it.



4. Carefully keep it inverted (means the batter touching the tawa and you can look the roti).


5. Cover it and let cook for few minutes.
6. Carefully flip it and cook for a minute or so.


7. Remove from tawa. Similarly, make another paratha uthappam also.
8. Cut into 4 parts and serve hot with ketchup, chutneys etc.
9. Yummy and healthy “Leftover Paratha Uthappam” is ready!


Tips:
1. Make sure the batter is not thin otherwise it will be difficult keeping it on the tawa.
2. Veggies can be replaced as per one’s choice.
3. If you want crispy roti, cook it for some time more.
