Zunka

Zunka step by step instructions:

Zunka is a Maharashtrian delicacy. It is best had with bhakri as it is commonly known as “Zunka Bhakar”.
Zunka is prepared with gram flour (besan) and onions as its main ingredients. Do check my other besan recipes also like “Dheela besan”.

Ingredients:
Gram flour (besan): ½ cup
Water: 1 cup (warm)
Onion: 1 small (finely chopped)
Garlic: 1 tsp (grated)
Mustard oil: 1 tbsp
Mustard seeds: ½ tsp
Cumin seeds: ½ tsp
Coriander leaves: 1 tbsp (finely chopped)
Green chili: 1 (de-seeded and finely chopped)
Curry leaves: 5-6
Red chili powder: ¼ tsp
Salt as per taste

Method:


1. Heat oil in a pan and add mustard seeds. Let the seeds splutter.
2. Now add cumin seeds, garlic, curry leaves, and green chilies. Cook until the raw smell of garlic has gone.



3. Now add onion and cook till onion becomes translucent.



4. Add red chili powder, salt, and besan. Roast until besan is fragrant and has changed its color. This procedure will take around 5-7 minutes. Keep the flame on low.




5. Now add water little by little making sure that no lumps are formed. Let it cook covered for about 13-15 minutes while stirring occasionally.





6. Now let it cook uncovered for about 10 minutes or until the mixture has become coarse in texture.



7. Add coriander leaves and mix well.
8. Serve hot with wheat flour bhakri, jowar bhakri, etc.
9. Delicious “Zunka” is ready!


Tips:
1. If the besan sticks to the kadai then let it cool for some time and then scrape off the besan. Then, again heat it.
2. It's alright if some lumps remain. But just try to remove as many lumps as you can.
