Besan Pancakes stuffed with Paneer

Besan Pancakes stuffed with Paneer step by step instructions:

This recipe looks so beautiful. We have to be just very quick while making the shape. That’s all! A besan chila is made, stuffing is kept inside and the chila is folded very quickly. The secret tip here is to pinch the chila when it is hot. When it gets cold and dry you cannot pinch it otherwise it might break.
I stuffed it with crumbled cottage cheese mixture.

Ingredients:
Besan: 1/2 cup less 2 tbsp
Water: ½ cup (lukewarm)
Red chili powder: ¼ tsp (or as required)
Salt as per taste
For the stuffing:
Cottage Cheese: 70 gms (crumbled)
Parsley: 1 tbsp. (finely chopped)
Basil: 1 tbsp. (finely chopped)
Black pepper powder: ½ tsp
Salt as per taste
Ghee for making pancakes

Method:
1. In a small bowl whisk together besan and water. Add salt and red chili powder and mix well. A thin batter will be made. Keep aside for half an hour.






2. Prepare the stuffing meanwhile. Mix together paneer, parsley, basil, black pepper powder, and salt. Keep aside.



3. Heat a tawa (girdle). Pour a ladleful (depends upon the size you want for the pancakes) of the mixture on the pan. Keep the heat to medium low. Drizzle few drops of ghee on the sides of the pancake.




4. Let the pancake cook for 1-2 minutes.
5. Then carefully flip it and cook for one more minute.
6. Keep the pancake on a cloth. Put a tbsp. of filling on it and fold as shown. You need to be quick here. Also, please don’t get your fingers burned while pinching the pancakes.





7. Similarly, do for the remaining batter.
8. Serve hot.
9. Healthy and delicious “Besan Pancakes stuffed with Paneer” is ready!


Tips:
1. The pancake must not be cooked until it turns brown otherwise it will become crispy and we won’t be able to pinch it.
2. The stuffing can be taken as per one’s choice.
